The Founders

Domenic Carisetti and Patrice Demay, longtime friends and veteran Finger Lakes winemakers, designed and built Chateau Renaissance Wine Cellars in a Normandy/Tuscany style architecture. Domenic and Patrice started the winery to provide training and employment opportunities for people with disabilities and people on public assistance. In conjunction with thier mission, they are also a teaching winery in partnership with Corning Community College located in Corning, New York, and offer classes in both viticulture (grape-growing) and enology (winemaking).

Their Wines

NEW YORK STATE CHAMPAGNES

All the champagnes are made one bottle at a time using a 500 year old recipe from the former Demay family champagne house in the Loire Valley of France. Their cuvees (base wines) are made in the traditional European style using yeast strains from their own vineyards. This "wild yeast" fermentation gives all their wines layers of complex fruit flavors. They use the traditional "methode champenoise" style from their 1000 bottle stacking system to ferment their champagnes tusing their 125 year old riddling racks to clarify their champagnes in preparation for disgorging (removing the yeast sediment). The champagne bottling equipment is from France and is over 70 years old.

The champagnes are creamy and smooth and can be served any time, with appetizers, or in place of a table wine with meals, or mixed with thier fruit wines as a "kir"(1/2 fruit wine and 1/2 champagne) in place of a wine cooler.

Cranberry: A deep red color with a fragrant cranberry aroma gives our cranberry wine its special character. They add a hint of orange zest. A unique wine to impress your guests. Excellent with turkey and all the trimmings. $7.99 $95.88
